Gluten Free Blueberry Muffins

Ingredients
3/4 Cup of Rice four3/4 cup of Buckwheat Flour1/2 cup of almond meal1 tsp baking soda1 tsp baking powder1 tsp cinnamon1/3 cup apple sauce1 egg or egg replacement (1 tbsp. of ground chia in 1/4 cup of hot water, sit for 10 mins)1/2 cup of maple syrup1/4 - 1/2 cup water2 cups of fruit/berries
Directions
Ground the chia seeds and let set with 1/4 cup of hot water for 15 minutes.

Mix dry ingredients together. Add wet (minus fruit), and mix until combined. Fold in fruit (I used apples and blueberries, you can use whatever you want).

Pour into lined muffin trays. Bake at 350 for approximately 25 minutes or until toothpick comes out clean
