Red Lentil and Pinto Bean Taco Filling

Ingredients
1/2 Tbsp olive oil1 medium onion, diced3 cloves garlic, minced1 cup red lentils, rinsed2 Tbsp chili powder1 Tbsp cumin1/2 tsp kosher salt2 cups water (or broth, nutritional info not included)15 oz can pinto beans, drained and rinsed
Directions
Heat the olive oil in a medium saucepan over medium heat. Add the onion and saute until softened. Add the garlic and saute 1 minute longer. Add the lentils and the spices, stir to coat the lentils. Add the water and bring mixture to a boil over high heat. Reduce to simmer and simmer covered for 20 minutes or until lentils begin to fall apart. Stir in pinto beans and heat through.

Serving Size: 6 servings for tacos, 4 servings as entree
