Yummy Blueberry Bran Muffin

Ingredients
Wheat bran, crude, 1.5 cup Milk, nonfat (skim milk), 1 cup Applesauce, unsweetened, .5 cup Egg, fresh, whole, raw, 1 large Honey, .5 cup Vanilla Extract, 1 tsp *Whole Wheat Flour, 1 cup Baking Soda, 1 tsp Baking Powder, 1 tsp Salt, 1 cup Blueberries, fresh, 1.5 cup
Directions
Preheat oven to 375 degrees. Line muffin tin with papers. Mix together in a 1 quart measuring cup: milk, applesauce, egg, honey, and vanilla. Measure Bran into a large bowl; stir in liquid mixture. Let stand 10 minutes. In sifter, combine flour, baking soda, baking powder and salt. Sift into wet ingredients. Stir until well combined. Fold in blueberries. Scoop into muffin tins and bake for 15 - 20 minutes, until the tops spring back when lightly tapped. These muffins are great frozen. To reheat, just wrap in a paper towel and microwave 30 seconds. A nice quick low point breakfast or snack.
