Sunflower Mac from Post Punk Kitchen

Ingredients
1 cup unroasted sunflower seed kernels, soakedt Tbl olive oil1/2 cup thinly sliced carrots1 small onion, diced3 cloves garlic minced1/2 t salt3 cups vegetable broth2 TBL cornstarch1/4 cup nutritional yeast (I used 3/4 cup)2 TBL tomato paste (I used whole small can)1 TBL lemon juicesweet paprika for sprinkling
Directions

Soak seeds 2 hours or overnight in cold water.

boil pot of salted water for pasta & cook as per box instructions.

preheat sauce pot over medium heat and saute carrots & onions till softened. Add garlic and saute 30 seconds.

Combine all in blender, blend till creamy, pour over cooked pasta.

Serving Size: Makes about 6 one cup servings including pasta.
