Breakfast wrap filling - CPADDOCK

Ricotta Cheese, part skim milk, 1 cupScrambled Egg, 6 largeChicken Broth, 0.25 cupHam, extra lean, (5% fat), 1 cup, dicedGarlic, 2 cloveMushrooms, fresh, 3 cup, pieces or slicesOnions, raw, 0.5 cup, choppedSpinach, fresh, 3 cupPeppers, sweet, red, fresh, 1 largeEgg white, 6 servingAsiago Cheese, 3 ozSuperstore Hashbrowns, 3 cupHormel Bacon Bits, 3 tbsp
1) Put hash browns in casserole dish at 425 for 20 minutes (until brown - may like to broil for a few minutes to brown)
2) Heat skillet with 1/2 the chicken broth
3) Add onion, garlic, peppers. Cook for 5 minutes
4) Add spinach, mushrooms, bacon & ham. Cook for 5 minutes
5) Remove mixture from heat and put in bowl.
6) Mix in the ricotta cheese
7) Clean out and reheat skillet with remaining chicken broth.
8) Scramble eggs & egg whites. Cook in skillet.
9) Add eggs to previous mixture.
10) Once cooked, add hash browns to mixture.
11) Use tortilla of choice (not included in this calorie count) & mixture and fold into burrito
2 tbsp is a serving.
