Individual Lemonade Cheesecakes

Ingredients
2c cottage cheese1 pkg (2 qt size) Crystal Light2 large eggs1/4 c Truvia baking blend1 Tbs flour4 Tbs Dannon nonfat plain yogurt1/2 c graham cracker crumbs2 Tbs Fiber One crumbs (3 Tbs cereal grinded to make ~2+ Tbs)1/2 Tbs Truvia baking blend2 Tbs coconut oil, melted
Directions
Coat inside of 6 - 6oz jelly jars with an oil spray (I use a "Misto"). Mix the graham cracker crumbs and fiber one crumbs together with the sugar and coconut oil. Place 1 full Tbs of mixture in the bottom of each jar and tamp down (I use the end of my rolling pin). Next blend the cheesecake ingredients all together; I use a blender stick to blend the mixture until the cottage cheese is smooth. Pour ~1/2c batter in each jar, on top of the crumbs. Set in a baking dish and pour hot water into dish, so that the water level is about half way up the jars. Bake at 325 for 30 minutes, turn off oven and leave in for another 30 minutes. Take out and use a towel to lift the jars out and place on a dish towel on the counter. Cool, then refrigerate.
