Vegetable Soup

Ingredients
Carrots, raw, 1 cup, strips or slices Olive Oil, 3 tbsp Onions, raw, 1 cup, chopped Garlic, 1 clove ( Zucchini, 4 cup, sliced Oregano, ground, 1 tsp Canned Tomatoes, 1 14 oz can Vegetable Broth, 4 cup Lima Beans, 1.5 cup Spinach, fresh, 4 cup
Directions
Heat oil and add onion; saute 3 minutes or until soft. Add oregano and garlic and saute another minute. Stir in zucchini and carrots and saute 5-7 minutes or untill veggies are tender. Stir in tomatoes, broth and lima beans. simmer 20-25 minutes. Stir in Sinach and cook until wilted

Serving Size: Makes 8 1 and 1/2 cup servings
