Green Bean and Radicchio Salad

Ingredients
1 lb. green beans1 c thin sliced radicchio1/3 c walnuts, toasted & chopped4 oz crumbled goat cheeseLemon Dressing1 T lemon juice1 small clove garlic, finely minced3 T olive oilsalt & pepper
Directions
1. Steam green bans until crisp tender, 4 - 5 mins. Run under cold water, drain well, and dry with paper towels.
2. Soak radicchio in cold water for 10 mins to remove bitterness. Drain water, spin dry, and put beans and radicchio in a salad bowl.
3. Combine dressing ingredients and whisk together.
4. To serve, toss salad with dressing and top with walnuts and goat cheese.
