Clean Eating Blueberry Muffins

Ingredients
1 cup oatmeal1/2 fresh squeezed orange juice1 cup ww pastry flour1/2 cup coconut crystals/sugar1 1/4 tsp baking powder1/2 tsp sea salt1/4 tsp baking soda1/2 cup EVOO1 egg1 cup frozen or fresh blueberries
Directions
Preheat oven to 400 degrees. Grease muffin pan with EVOO. In a small bowl, mix the oats and orange juice together. Set aside.

In a medium bowl, mix flour, sugar, baking powder, salt and baking soda. Thoroughly blend in the oil and egg. Stir in the oat mixture and fold in the blueberries. Spoon the batter into the prepared muffin cups.

Bake 18-20 minutes.

Serving Size: Makes 12 regular size muffins
