Carrot Soup

Ingredients
3 cups carrots (or 2 cups carrots and 1 cup broccoli)2 cups boiling water1 tsp chicken bouillon2 tbsp butter1/2 onion, chopped2 tbsp flour1 tsp salt1/4 tsp pepper2 cups milk2 tsp parsley
Directions
Cook carrots in 2 cups boiling water with bouillon for 10 minutes. Saute onions in butter. Stir in seasonings and flour. Add milk, stir until smooth; simmer until thickened and heated through. Add thickened mixture to carrots.

Serving Size: makes 4 1-cup servings
