I Whole Chicken Raw. Skin removed2 Cans Tomatoes2 250gr Punnets White Mushrooms1 Large Red Pepper, chopped1 large Red Onion, chopped1 x Glass White Dry Wine2 tbsp Robertsons Italian HerbsSalt and Pepper to tasteChicken stock as needed
In an electric frying pan, brown Onion, Peppers, add Italian Herbs. Add chicken and brown slightly. Add canned tomatoes and Dry white wine and let simmer for 60 mins. Remove Bones from chicken, add stock and mushrooms, simmer very gently for 2 hours until sauce is rich and thick. Add Salt and pepper to taste
