In a large stockpot, saute the onion in butter. When soft, add garlic, ginger, cayenne, cumin seed, and turmeric. After 1 minute, add lentils and saute for one minute. Add broth and simmer, covered, for 25 minutes or until lentils are soft. Using an immersion blender, puree soup. Return to low heat and add mustard greens.Cook until mustard greens are wilted. If needed, add water.
