Simple lentil soup (gluten free, vegan)

Ingredients
2 cups lentils8 cups veggie broth (Trader Joe's organic, GF, vegan)Trader Joe's mirepoix soup starter (1 container, 14.5 oz)1 Tbsp olive oil1 bay leaf1 Tbsp dried oregano1 clove crushed garlic1/2 cup canned, low sodium diced tomatoesSalt and pepper to taste
Directions
Boil lentils for 2-3 min separately.
Heat olive oil in stock pot. Add mirepoix and cook until softened. Drain lentils and add to stock pot. Add bay leaf, oregano, garlic. Cook for 2 min. Add veggie broth, vinegar and diced tomatoes. Let simmer for at least an hour. Season with salt and pepper
