Chicken Parmesan (GF)

Ingredients
4 boneless, skinless chicken breasts1 cup blanched almond flour1 teaspoon sea salt2 large eggs2 tablespoons grapessed oil2 tablespoons extra virgin olive oil2 cups tomato sauce 1 cup grated mozzarella cheese1/4 cup grated parmesan cheese
Directions
Pre-heat oven to 350 F. Cut chicken breasts in half horizonally, butterfly and pound flat. Cut each half into 2 pieces.

In a medium bowl, combine almond flour and sea salt. In a separate bowl, whisk eggs. Dip chicken pieces in the eggs and the coat with almond flour mixture.

Heat grapeseed and olive oil in a large skillet (medium-high heat). Saute the coated chicken in the oil for 3-5 minutes per side, until golden brown. Place chicken on paper towel lined plate.

Pour 1 cup tomato sauce into a 13 by 9 inch baking dish. Place the cutlets in a single layer over the sauce. cover the chicken with the remaining sauce then top with mozzarella cheese.

Bake for 10-15 Min until cheese is melted and bubbling. Remove from oven, top with grated parmesan cheese and serve.
