Curried Apricot Pork Chops

6 Tblsp apricot nectar5 Tblsp Apricot Preserves3 Tblsp Dijon Mustard3 Tblsp reduced sodium soy sauce3 tsp Curry Powder6 boneless pork loin chops (5 oz each)1 tsp salt1 tsp pepper2 Tblsp Olive Oil1.5 cup sliced fresh apricots (abt 5 small)Green onions sliced
1. In a small bowl, whisk together the first five ingredients, set aside.
2. Sprinkle pork chops with salt and pepper. In a non stick skillet, cook chops in oil for 4-5 minutes on each side until nicely browned.
3. Add the sauce that you set aside earlier, the apricots and onions and turn chops a couple of times to coat. use tongs or spoon to spoon some apricot and sauce mixture on top of each chop, cover and let simmer. Turning every 10 minutes or so for 30 minutes or until chops are cooked and tender.
Serving Size: 6 servings (1 chop + 1/3 cup sauce)
