Homemade Dried Tomatoes

20 tomatoes (firm)1 full tbsp salt1 full tbsp sugar3 cloves of garlic2 tbsp fresh chopped basil1 tbsp oregano1 tbsp rosemary1 1/2 cups of extra virgin olive oil
Cut the tomatoes in half horizontaly. Remove all pulp and seeds. Place the tomatoes in baking pan, facing up (like little baskets). Mix the sugar and salt and sprinkle on top of the tomatoes. Bake in medium oven for about 1 1/2 hours, or until water acumulated is dry and tomatoes are wrinkled. Flip the tomatoes over and bake them until they're all wrinkled, without burning them.
Mash the garlic and fry it in a little olive oil. Add the basil, oregano and rosemary, the rest of the olive oil and mix with the tomatoes. Place in a glass jar with good seal and refrigerate.
These tomatoes are great on salads, to be served with bread for a party, and even tasty solo.
Makes 40 servings.
