Vegetarian Red Beans and Rice

Ingredients
1 cup brown rice2 cups water2 Tbsp. butter1/2 of large onion, chopped1-1/2 jalapeno peppers, seeded and chopped15 oz. can red kidney beans, drained and rinsed2 Roma tomatoes, chopped2 Tbsp. chili powder
Directions
Bring 2 cups of water to a boil and add rice, stir. When mixture returns to boil, reduce heat to low, cover and let simmer 35-40 min. Do not stir or uncover.

While rice is cooking, saute onions and peppers in butter until softened. Add kidney beans, tomatos and chili powder and stir to combine. Cook until heated through, then keep warn on low heat.

When rice is cooked add bean mixture to rice and stir to combine.
