Boiled Eggs in Mustard Sauce

Ingredients
Mustard sauce:6 eggs (2 per person)3 Tsp sunflower oil.25c whole grain flour1.5c water1stp salt.5tsp black pepper1 dash of nutmeg.5tsp turmeric1tsp ground ginger3 tsp yellow mustard1fl. oz milk (you can use low-fat, but it is expensive here)Boiled potatos:3 small potatos (1 per person)
Directions
start by boiling the eggs, so that they are cold enough to peel when you need them in the sauce.
Now make a roux, this is the basis for most German sauces.
You heat your oil in a pot, then add flour and let it simmer about 30 seconds- 1 minute (depending on how dark you want it), then add water a stir vigorously ensuring no lumps are left and you have a smooth sauce. Now add the spices & mustard and simmer for 3-4 minutes. Then add the milk and more water if needed. Now put the peeled eggs whole into the sauce and simmer for another 10 minutes.
Meanwhile boile the potatos.

Put the potatoes in bitesize pieces on the plate and place 2 eggs per person next to it and pour the mustard sauce over the whole.
Serve with a fresh salad
