Minestrone alla Romagnola

Ingredients
Olive Oil, 2 tbspButter, salted, 15 gramsOnions, raw, 1 medium (2-1/2" dia)Carrots, raw, 2 mediumCelery, raw, 2 stalk, medium (7-1/2" - 8" long)*Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.)Zucchini, 400 grams (remove)Cabbage, savoy, fresh, 1 to 2 cups*Beef Stock (Knorr Beef Stockpot Makes 500mls of Stock), 28 gram*Passata, 100 gram(s)Orzo Pasta, 80 grams
Directions
Heat the oil and butter, chop and add the vegetables in the order stated. When they are all starting to colour and soften, add the stock and passata plus a pint of hot water. Cook at a steady bubble for at least two hours, adding the orzo for the final half an hour
