Homemade Strawberry Lemonade Fruit Snacks

- 1 cup fresh squeezed lemon juice- 1 cup frozen strawberries- 3 tbsp raw honey- 5 tbsp kosher gelatin (I use Great Lakes)
On medium heat, combine lemon juice & strawberries in a sauce pan and heat until fruit is soft (stir frequently). Add in honey and mix well. Blend with immersion blender to puree any fruit chunks. Turn heat on low & add in gelatin 1 tbsp at a time, stirring vigorously to break up any gelatin clumps. When all gelatin is dissolved, pour into glass pan or silicone molds and refrigerate for 30 min or until mixture has firmed up. Cut into slices or pop out of mold & store in refrigerator in a small covered container.
