Mexican Egg Fried Quinoa

Ingredients
Directions
1 cup dry quinoa (cooked according to directions) OR 3 cups cooked quinoaCooking spray or olive oil1 - 2 cups chopped veggies of choice (can use peppers, broccoli, onions, corn, tomatoes, mushrooms, etc)6 eggs1 cup shredded cheddar cheese1/2 cup sasla1 tsp cumin1 tsp garlic powdersalt and pepper to taste
-Cook quinoa per directions.
-Meanwhile, spray a frying pan and turn the heat to medium.
-Add veggies of choice and saute for a few minutes.
- Whisk eggs with 1 Tbsp of water in a bowl.
-Remove veggies from pan and save for later.
Spray pan again and add eggs. Stir until starting to set then add back veggies. Stir in salsa, cheddar, cumin, garlic, salt and pepper.
Turn off heat and stir in cooked quinoa.
Serve!
