1 cup quinoa, uncooked3/4 cup frozen shelled edamame1/3 long english cucumber, diced1 bell pepper, chopped1/2 cup carrot, chopped1 small ear of corn, raw, kernels sliced off0.5 tablespoon olive oil0.5 tablespoon Braggs liquid aminos0.5 tsp soy sauce1 tablespoon lime juice1 garlic clove, mincedSmall amount of ginger, grated
Cook quinoa according to package directions.
Cook edamame according to package directions.
Meanwhile, whisk together dressing ingredients, and chop up vegetables.
Once quinoa and edamame ready, mix together with vegetables and dressing.
Refrigerate until ready to serve.
