1/3 finely chopped onion.3 1/2 cups cooked whole wheat elbow macaroni13/4 cups shredded reduced fat cheddar cheese2 tbsp minced fresh parsley1/2 cup fat free evaporated milk1 3/4 cup 2% cottage cheese1 tsp Dijon mustard1/2 tsp salt1/4 tsp black pepper
In a microwave bowl cover and microwave onion on high for 2 minutes or until tender, drain. Add the macaroni cheddar cheese, and parsley. In a blender or food processor, combine milk, cottage cheese, mustard, salt and pepper. Stir into the macaroni mixture. Pour into 1 1/2 quart baking dish coated with non stick spray. Bake uncovered at 350 degrees for 20-25 minutes or until lightly browned.
