Mexican Dinner

Ingredients
2 boneless, skinless chicken breasts1 large jar of salsa (you choose the hotness)2 cups of cheese (your choice)2 cups of frozen corn1 can of red beans, rinsed1 can of red beans, rinsed
Directions
Cook chicken until done. (I usually boil it as it makes it easier to multi-task). If you have a large skillet that is oven-safe, you can make this dish in one pan. If not, two is all you need!

Then, mix together: chicken, the whole jar of salsa, ONE cup of cheese, corn, and both cans of beans until well mixed. Cover.

Bake at 350* for 30-45 minutes. Sprinkle the remaining on top. Place back into the oven for an additional five to ten minutes.

I usually serve this dish with tortillas because they are filling. However, if you're having a Nacho Night, you could certainly use tortilla chips.
