Chinese Style Stir-fried Shiitake Mushrooms

2 tblsp peanut oil1 teaspoon ginger, minced1 teaspoon garlic, minced8 oz fresh shiitake mushrooms, quartered (about 2 1/2 cups)1 tablespoon soy sauce1 tablespoon green onion (green part only)sliced1 tablespoon seseme oil
Over medium-high heat, heat a large heavy nonstick skillet until a drop of water sizzles on the surface. Add oil, ginger and garlic; cook, stirring constantly until fragrant, about 1 minute. Add mushrooms; cook, stirring frequently, until mushrooms are golden brown, 3 to 4 minutes. Add soy souce and sesame oil; cook and stir until most of the soy sauce evaporates, 1 to 2 minutes. remove from heat; sprinkle with green onion. top with toasted seseme seeds and serve over steamed rice, if desired. Serves 2.
