Kale/Roast Sweet Potato Salad with Chili Vinegrette

Ingredients
Sweet potato, 3 sweetpotato, 5" longBeans, black, 2 cupYellow Sweet Corn, Canned, 1 can Kale, 4 cup, chopped*Green Chili Peppers, canned, 1 cup*Canola Oil, .5 cupLime Juice, .25 cupPepper, black, .25 tspSalt, 1 tsp*Cumin seed, .25 tspChili powder, .25 tspPumpkin Seeds (raw), 1 cup
Directions
Cube the sweet potatoes. Season with 1 tbsp of oil and salt and pepper. Roast at 375 degrees for 12 minutes.

Make dressing with remaining oil, lime juice, and all spices.

Toss all of the ingredients together, dress to taste.
