1 tbsp Butter2 stalks Celery3 Garlic Cloves1/4 Cup While Onion3 Cups Vegetable Broth1 tbsp Madras Curry Powder2 medium potatoes (peeled)2 Cups Butternut Squash (peeled and chopped)Dash of CinnamonCilantro (For Garnish)
In a sauce pan saute onions, garlic, celery and butter for 2 minutes. Add Vegetable broth, potatoes, butternut squash to pan. Bring to a boil. Let simmer for 20 minutes. Due to the fact that this is rather starchy add cinnamon and curry in the last 2-5 minutes. When Squash is tender (Check with piercing with fork) place soup mixture in blender or food processor until smooth. Garnish with Cilantro.
