Ingredients
Egg 1 whole and 1 extra whiteMozzarella Cheese, part skim milk, 2 oz Spinach, fresh, 7 leaf 1 green onion1 Mushrooms, fresh
Directions
Scramble eggs, pour into nonstick pan; using kitchen scissors cut mushroom & rolled up spinach leaves with onion inside into the egg; cook covered until egg is 2/3 cooked then add cheese & fold over. Eat when done to your liking.
