2 medium potatoes-diced1 medium onion1lb sweet italian sausage2 tsp paprika1/2 tsp cumin1/2 tsp chili powdersalt and pepper to taste
peel and dice potatoes into small pieces. Heat 1 tbsp olive oil in a frying pan and add potatoes. Cook approx 8 minutes until browned and soft. Remove to a bowl. Add chopped onion and sausage to pan and cook until onion is soft and sausage is no longer pink. Add spices and mix well. Add potatoes and mix until coated.
