Honey Pork Fajitas

Ingredients

Directions
Mix together 1 Tb. of the olive oil, honey, soy sauce and lemon juice. Cut 2- 8oz pork loin chops into thin strips. Add pork to the honey mixture and let stand for 30 minutes. While the meat is marinating, slice the green peppers and onions into thin strips. Heat a large pan over a medium heat with the remaining 1 Tb of olive oil and add the peppers and the onions. Stir fry until limp. Add the pork strips and cook, stirring often, until done.

Heat the flour tortillas in a pan or the microwave until soft.

To serve, layer the pork and pepper mixture, the pico de gallo, the lettuce and the sour cream.
