Broccoli/cheddar soup (keto friendly)

Ingredients
Onion 1 large choppedGarlic, 1 clove choppedBacon grease 1TChicken Broth, 6 cupsalt/pepper to taste, 1/2 t. ground thymeBroccoli raw, 4 cup chopped (1 lg bunch)Cheddar Cheese, 4 cup, shredded (remove)Bacon 4 slices cooked crispHeavy Whipping Cream, 1 cup 1/4-1/2 t. xanthan gum
Directions
bake bacon on foil covered pan for 20-30 min until crisp. sauté onion in 1 T. bacon grease until translucent. add garlic sauté one minute longer. add broth, bring to boil. add broccoli, salt/pepper/thyme and simmer for 10-15 min. until broccoli is tender. Stir in cheese and xanthan gum until melted. Add cream and crumbled bacon.
