Black Bean Enchiladas Verdes

Ingredients
Filling:1 Can black beans1 Red onionCilantro to taste4 Tbsp plain yogurt1 Lime (juiced)1 Cup shredded cheese (reserve 1/4 for topping)Salt, pepper, cumin, paprika, garlic powder to taste2 Cans salsa verde8 Corn tortillas
Directions
Pre heat oven to 375 degrees.

Mix together filling ingredients. Pour 1/4 salsa verde in glass baking dish.

Heat frying pan and quickly soften corn tortillas then dip in salsa verde. Add filling, roll, and place in baking dish. Continue until dish is full. Pour remaining salsa verde on top and add reserved cheese.

Loosely cover in foil and bake 20 minutes, uncover and bake an additional 5 minutes.
