Chocolate Frosting

Ingredients
1.25 C Heavy Whipping Cream1.5 C Cane Sugar1 C Cocoa.75 C Butter2 tsp Vanilla1/8 tsp salt
Directions
1. In a medium saucepan, bring cream and sugar to a boil. Reduce heat to low; simmer, stirring occasionally, until slightly reduced, 5 to 6 minutes.

2. Pour the cream mixture into a medium bowl. Add the chocolate, butter, vanilla and salt. Let the mixture stand, stirring it occasionally until chocolate and butter are fully melted.

3. Fill a large bowl halfway with ice and water. Set the bowl with the chocolate mixture in the ice water and beat frosting at medium speed until thick and shinny, about 5 minutes. Use immediately.
