Creamy Rice and Mushroom Soup

Ingredients
1 tbsp. coconut oil 5 cups white mushrooms, sliced 1 1/2 c. celery, chopped 1 c. carrots, chopped 1 cup onion, chopped 1/4 c. flour salt + pepper to taste 5 c. vegetable broth 1 c. cooked wild rice 3/4 c. sour cream 1 tbsp. dry parsley
Directions
1.Heat oil in a pan over medium heat. Add mushrooms, celery, carrots, and onion and cook, stirring often, (5-7 minutes). Stir in flour, salt, and pepper and cook for 2 minutes, stirring constantly.
2.Add broth and bring to a boil. Boil vegetables till they have softened. Reduce heat to a simmer and stir in rice, sour cream, and parsley. Simmer for a couple more minutes and serve.
