Barcelona Soup with Tofu

2 Boxes of Vegetable Broth 1 Can Whole Kernel Corn 1 Can Spinach 1/2 Onion Sauteed2 Tsp Pesto 2 Cup Chopped Carrots1/2 Tsp Minced Garlic 3 Chopped Celery Stalks1/2 Package Firm Tofu 1 Tbs Herbs de Provence
1. In a large pot, cook vegetable broth on medium to high. Drain spinach and corn. Add to broth. Add pesto.
2. Sautee onion with garlic. Add to broth.
3. Add carrots and celery to broth. Add spices.
4. Chop Tofu into small cubes and add to broth.
5. Let simmer for about an hour. Check to see if carrots are soft. Serve warm or freeze.
