lemon cake pie

Ingredients
1.5 c + 3 T flour1 c shortening1 c sugar4 T melted butterzest of one lemon1/4 c lemon juice2 large eggs, seperated1 c milk
Directions
Make crust by cutting shortening into 1.5 c flour. Add cold water until dough forms. Roll out and fill 9 in pie pan. Preheat oven to 450.
Add all ingredients together EXCEPT egg whites. Beat egg whites until stiff peakes form. Fold into mixture and pour into pie pan. Bake 10 min. Reduce heat to 350 and bake an additional 30 min or until knife inserted in center comes out clean. If pie darkens too quickly-tent with foil.

Serving Size: makes 8 slices of 9 in pie
