Blue Cheese, Mushroom & Leek Cream Sauce

Ingredients
Leeks, 1 leek *Baby Bella aka Baby Portabella Mushrooms, 8 oz Butter, salted, 1 tbsp Blue Cheese, 4 oz Half and Half Cream, 2 cup Garlic, 1 clove
Directions
Melt the butter and sweat the leeks until clear. Add garlic and mushrooms; saute, being careful not to burn. Add cream and blue cheese. Simmer on low heat for 20 minutes until sauce has thickened.
