Almond Coconut Paleo Cookies

Ingredients
1/2 cup almond meal1/2 cup sliced almonds1/2 cup unsweetened coconut1/8 cup honey1/8 cup coconut oil1/4 teaspoon baking soda1/2 Tablespoon water
Directions
Mix almond meal, almonds, and coconut.

Heat honey and oil in a small pot. Mix baking soda and water. Add to honey and heat until it foams.

Add honey mixture to dry mixture and stir until combined.

Form 11 Tablespoon sized balls on a cookie sheet and bake for 25-30 minutes until golden

Serving Size: makes 11 rounded tablespoon sized cookies
