Red Curry Pineapple Chicken

Ingredients
* Lite Coconut Milk * Natural Chicken Cooking Stock * Chicken Breast (boneless, skinless) * Canned pineapple * Fish Sauce * Water chestnut slices * Onions * Green Peppers * Curry powder * Red Curry Paste * Basil * Cinnamon
Directions
Chop onion, green pepper and tomato.

Cook olive oil, onion, pepper, and tomato in skillet until onion is partially caramalized. Add juice from can of pineapple. Add curry paste and curry powder until mixed well.

Transfer to pot and mix in lite coconut milk, and chicken stock until boiling. Add fish sauce, basil, and cinnamon. Let simmer for 10 minutes. Add chicken. Let cook on medium heat sturring frequently for another 11 minutes.

Serve with rice.
