Greek Penne Pasta Salad

Ingredients
1 (13.25-ounce) box whole-wheat penne 1 cup cooked fava beans or edamame 12 black olives, chopped (optional--omitting will reduce sodium)1/2 a red onion, thinly sliced (optional)2 cups cherry or grape tomatoes, quarteredjuice and zest of one lemon 1/4 cup balsamic vinegar 1/4 cup olive oil 1/2 t dried oreganohandful each fresh basil and parsley, leaves only, choppedpinch red pepper flakes 4 ounces crumbled reduced-fat feta (about 1 cup)
Directions
Prepare the pasta according to package directions, omitting any salt or fat.
In a large bowl, combine the remaining ingredients, except the feta.
Drain the pasta and immediately toss with the veggies and dressing.
Refrigerate for at least an hour, up to overnight. Add feta just before serving.

Serving Size: Serves 12. 1 1/2 cups per serving

    The was amazing. I served it as a cold pasta salad with Greek boneless pork chops. It was almost impossible to eat only one serving. For the leftovers-I warmed it up to serve as a hot pasta and tossed in sliced grilled chicken that I had seasoned with dry Good season Italian dressing. OMG!!! - 7/10/13

    As I look at the recipe and the picture of it determining whether I will try it - they don't match! Clearly there are thin slices of cucumber in the picture which aren't listed in the ingredients. The greens that are pictured aren't basil or parsley leaves. What's up with that? - 3/26/15

    I make one very similar to this one but I don't use any oil. No one in the family even noticed. When I told them after they enjoyed their meal, they were very surprised and don't add any now when they make it. I do like the idea of adding beans for more protein. Thank you for sharing. - 3/26/15

    I made this but cut the recipe back for less servings, I did add some cucumbers because it was in the picture. Very good, but I think next time more veggies and less pasta. I used the mini penne, I like the smaller size, and Greek olives. - 7/29/20
