Gluten Free Vegetarian "lo mein"

Ingredients
*Udon rice noodle, .75 lbs (cooked)Mushrooms, 4 med sliced Zucchini, 1 cup, sliced Baby bok Choy 2 heads choppedAsparagus, fresh, 1/2 lb chopped*Extra Virgin Olive Oil, 2 tbsp Sesame Oil, 1 1tsp *Soy Sauce, .25 cup*Fish Sauce, 1 tbsp Garlic, 3 cloves minced*Ginger Root - 1 Tsp gratedEgg, fresh, whole, raw, 1 large lightly beaten
Directions
Heat olive oil and sesame oil in wok. Add Mushrooms and vegetables. Stir fry until veggies are crisp tender. Add egg and scramble until cooked through.
Add Noodles, Ginger and garlic and stir fry for 3-4 minutes. Add soy sauce and fish sauce and toss to combine.
