Gazpacho, Easy Blender

Ingredients
2 cups tomato juice (campbells is best)cucumber peeled & sliced1 medium green pepper (chopped)2 scallions (chopped)2 cloves garlic (finely died)1/4 cup parsley (finely chopped)3 Tspn red wine vinegarjuice of 1/2 lemonfew dashes tabasco sauce1 tsp oregano (dried...2 Tspn fresh)1/4 cup olive oilfreshly ground pepper
Directions
in blender, combine first 10 ingredients. blend until smooth. Pour in bowl. Stir in Olive Oil and peper (salt to taste if desired). Chill thoroughly. Serve with chopped veggies or croutons (not included in recipe).
