Healthy Tofu Egg Scramble

Ingredients
Extra Virgin Olive Oil, 1 tbsp Egg white, fresh, 2 large Tofu, firm, 0.5 cup Spinach, fresh, about 1 cup
Directions
Mix eggs with a dash of water in a separate bowl and set aside. Sautee tofu in olive oil till light brown. Add approximately 1 cup of spinach and continue to sautee together till spinach wrinkles up. Add egg and continue cooking till egg is fully cooked. Enjoy!
