Salad Soup (Hot Italian Sausage)

Ingredients
6 links Hot Italian sausage (casings removed)1 tbsp Minced Garlic1 Sweet Yellow Onion Diced1 14 ounce can of Low Sodium Black Beans1 pk of frozen chopped collard greens1 14 ounce can of Low Sodium Diced Tomatoes1 small can of tomato paste6 cups of Low Sodium Free Range Chicken Broth
Directions
Crubmle and brown the sausage in it's own fat, with the garlic and onion until the sausage is cooked through.

Add the can of tomato paste and stir in well.

Rinse the black beans, add them and the rest of the ingredients to the pot and let it simmer for 30 minutes. It also works well in a crock pot. This is one of those soups that's even better the next day.
