1 package smoked sausage of choice; could use turkey for less calories, fat, etc.1/2 to 1 onion depending on your taste, diced1 red bell pepper, diced1 orange bell pepper, diced6 red potatoes, washed and cubed2-3 TBSP veggie, canola, or olive oilspices of choice:black peppergarlic saltitalian seasoning
after chopping everything up, put about a tablespoon of oil in a 9x13 dish, add sausage, peppers, potatoes and onions, mix well. top with spices and another tablespoon of oil. mix again. cook for 20 minutes, stir, then cover with foil for another 20-30 minutes, until the potatoes are tender.
