Tofu Curry Sandwich Spread

Ingredients
2 - 12oz block of extra firm tofu2 Tbs red curry paste1 c. low-fat plain greek yogurt1/2 onion - diced small3 stalks celery - sliced thin100 grams (about 15) red seedless grapes - dicedSeasonings to taste (ex. salt, pepper, garlic, smoked paprika, etc)
Directions
1. Thoroughly drain tofu; crumble.

2. Stir in curry paste and yogurt.

3. Add remaining ingredients - season to taste. I made mine rather mild so my kids would eat it. Smoked paprika add great flavor and color.

Serving Size: Makes 10 of 1/2 cup servings
