Pumpkin Protein Bread

2 cups (solid mesure) cinnamon apple sauce2 cups Morena processed sugar2 eggs2 egg whites2-1/2 cups whole wheat flour1 cup vanilla whey protein powder2 tsp baking soda1-1/2 tsp salt2-3 tbsp ground cinnamon2 tbsp ground nutmeg1 can 100% pure pumpkin
1. Preheat oven to 350 degrees. Spray a 13"x9" baking dish with non-stick cooking spray. Set side.
2. Beat apple sauce and sugar until well-combined. Add 2 whole eggs and 2 egg whites, Beat again until well-combined. Set aside.
3. Gently whisk together whole wheat flour, vanilla whey protein powder, baking soda, salt, cinnamon, and nutmeg.
4. In two stages (half at a time) add dry ingredients to wet mixture. Mix well. When all wet and dry ingredients are mixed until smooth, beat in the can of pumpkin until smooth.
5. Pour into baking dish and bake at 350 degrees for about 50 minutes. Let cool and cut into sixteen 3.25" x 2.25" rectangles.
Serving Size: Makes 16, 3.25" x 2.25" Pieces
