Harvest Apple Salad

5 ounces baby spinach or other salad greens1 apple, peeled and cored, and sliced thinly 1 roasted beet, peeled and sliced thinly100 grams roasted sweet potato with peel, chunked.5 ounce walnuts, chopped
If you don't have roasted beets and sweet potatoes on hand, roast a beet and small sweet potato for each person you are serving, and cool.
Prep spinach and place in bottom of large individual bowl.
Arrange apples, beets, and potato in concentric circles:
Peel, core and slice an apple. Arrange around the outer circle of the bowl. (I used my apple peeler/corer, then cut the slices in half).
Peel a chilled roasted beet, slice, and cut the slices in half. Arrange the slices just inside the apple circle.
Roast, cool, chunk a small sweet potato (100 g.) and place in the middle of the beets.
Sprinkle the chopped walnuts on top.
Serving Size: 1 serving main dish
