Mediterranean Quinoa Salad

Ingredients
*Eden Organic - Quinoa (uncooked), 1 cup Baby Spinach (raw), 4 cupChickpeas (garbanzo beans), 2.25 cup (remove)Kirkland Artichoke Hearts marinated in oil, 215 gram(s) Red Onion Raw (1/4 cup, 40g or 1.4oz), .5 cup*Extra Virgin Olive Oil, 6 tbsp(C) Vinegar, Red Wine (Gr Value), 3 tbsp *Grey Poupon Dijon Mustard, 3 tsp*Florida SlimCado - Serving size 1/2 fruit, 1 serving Feta Cheese, 1 cup, crumbled Red Ripe Tomatoes, 7 Italian tomato
Directions
Cook the quinoa according to the package directions. Fluff with fork and let cool. Transfer to a large mixing bowl.

Add the spinach, garbanzo beans, artichokes, and red onion. Stir to evenly mix all of the ingredients.

In a separate bowl, whisk together the olive oil, red wine vinegar, and mustard. Add the herbs and season with salt and pepper. Pour the vinaigrette over the quinoa mixture in the large mixing bowl, and toss to evenly coat. Adjust the seasonings to taste. Serve topped with crumbled feta cheese.
