High Protein Grain Free Pancakes With Greek Yoghurt and Fruit Topping

Pancakes:1/2 Cup Almond flour1/2 Cup Garbanzo Bean flour2 eggs1/2 Cup Unsweetened vanilla almond milk1 tsp. cinnamon2 tsp. baking powder2 Tbs. vanilla extract2 Tbs. XylosweetYoghurt Topping:1/2 Cup plain, non-fat Greek Yoghurt1/4 Cup sugar-free preserves (I like strawberry or apricot)1 banana, sliced1/2 Cup strawberries, slicedPeanut butter *optional*
Pancakes:
Mix ingredients until smooth. Pour half a cup of batter into pre-heated oiled non-stick frying pan. Cook on both sides on medium high heat until done.
Yoghurt Topping:
Mix until well combined. Add a sliced banana and sliced strawberries.
Serving Size: Makes approximately 4 6 inch pancakes.
